I remember back in the day you posted photos of the carnitas you used to make and I was super jealous because it seemed super hard to prepare. I now know it's not but it still looked amazing!

Sourdough

Mix 20g salt and 285g room temp water.
Add ~150g starter and mix until it's completely dissolved.
Add 500g flour and stir until it's solid-ish.
Use your hands to fold it over until it's uniformly dough like.
Cover and wait half an hour, fold over 8-10 times again, should be more "rubbery" from the gluten.
Cover and let sit 8-10 hours, then it's ready

Preheat an empty Dutch oven to 475, put the bread in it and lower the temperature to 440, leave the lid on for 25 to 30 minutes, remove the lid and bake for another 25 to 30 minutes, cool on a rack for about 2 hours

 

it needs adjustment. it was a little too compact. this was my first attempt. im going to try less water next time.

Isn't that parchment paper? Did you line the Dutch oven with it or put it on the rack after the fact?
