I was just about to ask "what's your favorite vegetable," then I remembered potatoes are vegetables, and if you stack up a potato vs. a piece of broccoli, it's not really a contest. Many veggies have a lot of starch. It just has more than most. Potatoes are actually pretty nutritious, even without the skin! But it's a problem if it's your main source of vegetables because of its high carb content and the fact that's it's typically prepared with a lot of fat.
