My mother in law is here for her normal two month stay during November and December, which means I get fed alllllll my favorite traditional Mexican dishes. Went back to back mornings with these two meals and it really sets me up for a great day.

There's salsa, you just pan fry the tortilla alone for a little longer and do a little less salsa towards the end of the tortilla part.

 

Cook the egg separate, add salsa to egg towards the end of them cooking. Combine separately. 

 

Then when you plate, tortilla, salsa, egg, salsa, avocado, cotija.
