Feige has recently decided they're MCU canon, but that's pretty recent, until then they were at best like Star Wars Extended Universe levels of canon (canon until the movies contradict them).

They were in the MCU at the time they came out. They might still be, but there is confusion as to whether or not they are still considered canon with the Netflix deal no longer a thing, and Disney now having their own streaming service. Yes Feige has said that they will use Cox again if they ever bring Daredevil back, but that doesn't necessarily mean it's the exact same Matt Murdock, especially not with the multiverse stuff they are leaning hard into. I haven't seen No Way Home yet, but in Far From Home they reused JK Simmons as JJ Jameson, but it's not the same exact JJJ from the Raimi films, even though now technically those films are in a way part of the MCU, just a different universe, and not part of the "Prime" timeline or universe. Same thing could happen here where they will reuse D'Onofrio and Cox since people liked them, but they are different versions of the same character. Until we get official confirmation no one knows, hence the current confusion and speculation. The Netflix shows never really felt like they fit in with the movies, but now the D+ shows are doing a much better job of feeling like they are part of the MCU, so Marvel could easily say that the old Netflix shows are no longer considered canon, but we are going to bring back some of those actors to reprise their roles as different versions of themselves. Basically a fresh start.

They can have their cake and eat it too by just saying the Netflix shows happened in an alternate timeline. So they're canon, but not to the main timeline.
